From Chef John Fleer:
“Canyon Kitchen provides an exceptional restaurant and dining experience in a setting that is unique in the Blue Ridge Mountains. We offer a style of cuisine and hospitality that shines with a simple elegance and focuses on our guests and their experience in this special place. The seeds of this experience, like the vegetables in our “trout raceway” kitchen garden, are rooted in the Jennings’ love of nature, family and friends.
Beginning with the garden at the kitchen’s back door and extending to the Jennings-Eason’s Sunburst Trout Farm and to other local producers, our food is focused on the things that make each of us unique—where we are and where we’ve been. At the table, you will find the best foods our area offers, interpreted in a way that is both exciting and nourishing. These interpretations spring from my life in the South so the spirit of tradition runs deep in the food. At the same time the food is touched by the places I’ve been and the people I’ve met: foreign lands and admired chefs and friends.
A sweet Sungold tomato from the garden might appear on a salad with our Raceway lettuces, fresh herbs and my Nana’s pepper relish. Locally grown figs might be served with a rich Basque almond cake or in a chutney on Berkshire Pork glazed with New Orleans’ Abita Root Beer. Regardless of source and inspiration, rest assured that the food at our table is conceived in the spirit of the original vision of Lonesome Valley—to reconnect with nature, family, friends and self.
We look forward to welcoming you to your dining experience at Canyon Kitchen in Lonesome Valley.”
